Description:

Color:
Pale Golden Yellow
Aromas:
Ripe store fruit characters with citrus notes, layered with nutty characters
Palate:
Elegant and softly textured with ripe fruit and a creamy mid-palate, leading to a long, lingering finish with hints of toasty oak.

Food and Wine Match:

The creamy, savoury, citrus, stone fruit characters of Chardonnay make it a versatile food partner. Shellfish, Fish, Roast chicken, Pasta with creamy sauces. Ham, bacon, Cheese ( Camembert, Brie and Gouda).

Cellaring:

Superb drinking now or cellar for two to three years

Harvest Notes:

A sunny, dry spring was followed by warm summer months, punctuated by regular periods of rain that continued into vintage. Dry, sunny periods ensured continued ripening and good picking decisions resulted in grapes with flavour and good acidity.

Fermentation Notes:

Free-run juice was fermented in tank at 16-19°C with selected yeast to emphasise varietal character whilst adding complexity from the cool fermentation. Malolactic fermentation has added a creaminess to the palate.

Maturation Notes:

All components were left on lees and stirred to add textural interest to the palate as well as oak use for toasty complexity.
