Cellaring:

Whilst drinking very well now, this wine will reward short-term cellaring for up to three years from vintage

Fermentation Notes:

Machine harvested and de-stemmed (without crushing) into rotary fermenters. Short fermentations of 6-10 days, peaking at 26degrees celsius, were used to produce soft, fruity wines with vibrant colour and soft tannin structures.

Maturation Notes:

The wine was matured in stainless tanks in the presence of French oak, using micro-oxygenation to stabilise colour and integrate the oak and fruit tannins. Malolactic fermentation occurred in tank when the micro-oxygenation was complete. After blending, the wine was lightly fined, then filtered before bottling.
