Pinot Noir is Central Otago's signature varietal so it natural that this Huntaway wine comes from this world famous region. At 45o South, Central Otago is the most southerly grape growing area in the world nestled in close proximity to distinctive mountainous terrain where each of the main sub regions lie. Central Otago is the only semi continental climate area in NZ with huge diurnal temperature shifts and low annual rainfall. All of these factors together make it a great place to grow and make Pinot Noir.

Aromas:
This wine shows vibrant spicy cherry and plum fruit aromas with hints of violets. Chocolate, dried wild thyme and delicate oak toast add to the aromatic complexity.
Palate:
A rich array of ripe, spicy cherry and plum flavours deliver a richly satisfying mouth feel.

Food and Wine Match:

The concentration of fruit flavour and complexity of this wine makes it an ideal match for a wide range of foods. Enjoy with red meat dishes, especially game. Dark berry jus or mushrooms will also complement this wine.

Cellaring:

This wine may be enjoyed now but careful cellaring for up to six years will enhance the drinking experience.

Harvest Notes:

Central Otago was blessed with a stunning growing season in 2013. Although the season got off to a slow start and with some spring frosts, the region then embraced the warmer months to follow that lead the growing season into a lovely Indian Summer. The Huntaway Pinot Noir fruit is sourced from various sub regions within the Central Otago appellation ranging from the rich mineral free draining loam soils over schist gravels in Bendigo through to the more alluvial soils towards Lowburn.

Fermentation Notes:

The vines are monitored for ripeness of flavor, acid and tannin before being carefully hand picked and destemmed to open top fermenters. Once the fruit has been held on cold for a minimum of 5 days, the tanks are warmed up for the onset of fermentation. During this time the tanks are plunged daily to maximize the extraction of color, flavor and tannin into the young wines before being drained off skins and left to mature in French Oak barriques for 10 months.

Maturation Notes:

Following being drained off skins, this Pinot Noir is matured in Frnech Oak barriques for 10 months.
