This effervescent cuveé is a blend of 80% Chardonnay and 20% Pinot Noir to produce an aromatic aperitif style Sparkling wine. The fermentation process has been designed to accentuate the aromas of crisp apples, grapefruit and strawberries combined with delicate brioche characters and a naturally balanced acidity.

Aromas:
Fresh apple, grapefruit and citrus notes.
Palate:
Toasty brioche and shortcake flavours.

Harvest Notes:

This sparkling is a blend of 80% Chardonnay and 20% Pinot Noir. The Chardonnay and Pinot Noir are harvested crushed and quickly chilled to ~4oC.

Fermentation Notes:

The free run juice is gently pressed out and allowed to settle and clarify for 24-48 hours before racking. The juice is inoculated with carefully selected yeast to augment the flavours and aromas of each batch and allowed to ferment slowly at cool temperatures over several weeks to capture the crisp zesty flavours of Chardonnay and Pinot Noir. Each Chardonnay and Pinot Noir batch went through partial malolactic fermentation to give greater texture and balance the wines natural acidity with lees stirring to enhance the viscosity and richness of the base wines. The base wine is allowed to settle and naturally clarify before racking off gross yeast lees and prepared for secondary fermentation. Secondary fermentation occurs in bottle designed to capture the delicate effervescent bubbles that deliver a creamy mouth feel or "mousse" prior to bottling. The fermentation is controlled at cool temperatures to maintain the aromas and freshness of the wine. Time on yeast lees adds to the softness and creaminess of the wine, being managed to ensure the wine is not left on yeast lees for too long as this would distract from delicate freshness that is Te Hana. As the wine is transferred out of bottle under pressure it is blended to maintain consistency and maximise the acid and sugar balance.
